Garden Salad with Pea Shoots and Lime Chipotle Dressing + SEED Kit GIVEWAY!

Salad with Pea Shoots and Lime Chipotle Dressing
serves 2 ~ $3.14 per serving

5 oz mixed greens ($2.69)
1 medium onion ($.05)
1 avocado ($1.49)
pea shoots ($.50)

4 tablespoons lime juice ($.75)
2 tablespoons agave ($.40)
4 tablespoons olive oil ($.40)
1 large clove garlic ($.05)
1 teaspoon cider vinegar
1/2 to 1 teaspoon chipotle seasoning ( I used a Mrs. Dash brand)
1 teaspoon lemon pepper
1 teaspoon salt

lime slices for garnish 

It think it might be possible to eat salad every day and not eat the same one in a lifetime, there are so many variations in salads and dressings. 

This is really simple. Just assemble the salad and whir up the dressing ingredients in a blender. A bullet type blender works really well for this, although I use a pint canning jar attached to the blade assembly of my blender. Add a few lime slices for garnish.

  9. I'm not entering cuz I won the last one! <3 But gardening is very gratifying. I currently have a tea tray covered in green grape tomatoes (sposed to be yellow or red, I think) waiting for them to ripen. I had to salvage them from the frost!

  11. I think gardening is amazing, but unfortunately, I have a black thumb and everything I touch seems to die. We also have a lot of snakes by us and I am petrified, so gardening is out for me. I would love to be able to garden, though. I leave it up to my hubby. Need to do some garden boxes I think....

  17. I also visited Dollar Seeds. I like the disclaimer that their seeds are grown organically even if the farms haven't met certification yet - that is a long process. I can't wait to order from them in the spring!
