    Hayden and I loved this video. I always liked that song, and Hayden is still dancing to it. She wants to make caramel apple dip now, but unfortunately, I am out of dates. I guess we need to get to the store, asap.

    How long do you soak the dates? And could I soak them in almond milk instead of almond cream, and just eliminate the 2 T of almond cream? Thanks for any insight you can provide!

    Update: I decided to experiment and make a 1/2 recipe. I pitted and quartered 6 medjool dates and soaked them in about 1/4 cup of almond milk. Not enough to cover them entirely, but enough so they could all soak up some milk. I left them soak overnight in the fridge, but they were actually ready to process after about 4 hours (the milk got very syrupy). Not having any almond butter, I ground 3 T of walnuts in my mini-Cuisinart, then added the milk/dates, a pinch of salt, and a few drops of vanilla extract.

    And….DELICIOUS success! Oh my, the dip is *divine*. Mine was not as smooth as yours because of the nuts, but it matters not. I now have a yummy, healthy treat when when I am longing for "just a little something sweet" in the evening. Thank you so much for such a wonderful, versatile recipe!
