Breakfast
Fried Ice Cream
serves 2 ~ $.48 per serving
3 bananas ($.45)
flavoring (other frozen fruit or cacao) ($.40)
pinch salt
3 tablespoons ground flax ($.05)
1 tablespoon coconut flakes ($.05)
big pinch cinnamon
pinch cayenne (optional)
drizzle of agave, maple syrup, or coconut nectar
I hope everyone had a wonderful holiday. Our weekend included our kids, fireworks, and chocolate pie … so it was good.
Bananas and flax seed, that’s all this is. But when it’s called fried ice cream, it sounds truly decadent.
Make a batch of banana ice cream in your preferred way. For this, I took the bananas, cacao, and salt and pureed in the food processor until very smooth, then froze until firm. You can use frozen bananas and and the food processor, or use an ice cream maker. Whichever method you use, freeze the ice cream until it’s firm. Mix together the flax, coconut, cinnamon, and cayenne. Then, scoop the ice cream into a ball and roll each ball in the flax blend. Drizzle with a bit of your choice of sweetener.

Dinner
Tomato Sandwich
serves 3 ~ $1.54 per serving
1 cup ground flax seeds ($.50)
1 cup water
3 medium onions, thinly sliced ($.30)
2 large carrots, grated ($.40)
1 teaspoon salt
3 tablespoons olive oil ($.30)
tomato, lettuce, onion ($2.50)
cashew mayo
1/2 cup cashew ($.50)
1/2 teaspoon garlic powder
1 teaspoon agave ($.10)
This received rave reviews today. The bread was about the best raw bread I’ve ever had and it seemed very much like a really good … well, bread. It has to be just right, though. Dehydrated enough to be done, but not too crisp.
Mix together the ground flax seeds and water. Let sit for several minutes to gel. Slice the onions very thinly and grate the carrots (I used the food processor for both). Stir together and add the salt. Spread out on lined dehydrator sheets and dehydrate for about an hour. When it top is a bit dry to the touch, flip and continue drying on the other side. Let dry another couple hours until dry but not brittle. I used kitchen scissors to cut the bread into shapes.
Add some tomatoes, onion, and lettuce, and a dollop of cashew mayo.
To make the mayo, use a bullet type blender. Puree all ingredients until smooth and creamy.

Dessert
Chocolate Raspberry Tart
serves 6 ~ $1.12 per serving
1 cup walnuts ($2.00)
1 cup raisins ($1.00)
pinch salt
1 ripe avocado ($.88)
2 ripe bananas ($.30)
3 tablespoons agave ($.60)
1/4 cup cacao or cocoa powder ($.80)
1/4 cup cacao or cocoa powder ($.80)
1/2 teaspoon vanilla
2 tablespoons coconut oil ($.20)
pinch salt
3 ounces raspberries ($1.00)
This is just a basic chocolate avocado/banana tart, and one of my favorites. Today, it went over well with our non-raw guests.
In a food processor with an “S” blade, process the walnuts, raisins, and pinch salt. just until the starts sticking together a bit, which takes about a minute. Press into a tart plate and chill.
Again, in the food processor with an “S” blade, process the avocado, bananas, agave, vanilla, olive oil, and salt until very smooth. Pour into tart shell, top with raspberries, and chill until slightly more firm.

Question of the week:
For how many people do you usually prepare raw foods (or any foods)? Do you just make things for yourself, or do you cook/uncook for family?
What a fabulous menu today. I love the creative use of flax for the "fried" ice cream. I will definitely give this a try.
I live on my own but I make raw food for my friends and family as often as possible. They always love it!
god these look awesome. yummmm.
Everything looks wonderful! I think the "fried" ice cream is my favorite. We are addicted to frozen fruit sorbet so this sounds perfect to me.
Most of the time I make food for myself and my husband. But I have been known to cook for friends and family as well. ๐

These all look amazing as usual! I'm looking into buying a dehydrator so I can finally make all of your wonderful recipes…what brand would you suggest?
you are amazing as always!!
I just un cook for myself and some of my friends sometimes, never my hubby to be, he's kinda anti- raw!!
Maybe you should try Noelle's idea (just below your post).
Wow, I like the fried-ice cream recipe. I will have to give that a try!
I like making raw stuff but not passing it off as raw, because it seems to turn people off even my hubby, but eventually they like it.
Now that's my idea of a sandwich!
I love combining sweet fruits with red onions in a salad. Mmmm, it's like an explosion of flavors in your mouth.โข*ยจ`โ
First, a question, I want to make the beautiful little tart, but I don't actually see the chocolate listed in the recipe. Did you use cacao powder?
That salad looks fabulous. Can't wait to try it also. Thanks!
Oh yum Lisa! I am all over that onion bread!! Thanks for the great menu : )
yum! everything looks great! i love local peaches in the summer. can't wait to add them to my salads!

Lisa- it all looks amazing. I am going to try your onion bread and the frozen ice cream!

Thank you so much for your wonderful recipes, accompanied by excellent, vibrant photos! I prepare for myself, and try to get my husband to try it! It's just the two of us. The rest of the family loves pretty much everything I've prepared so far.
Again, thanks!
Oh my goodness woman!!! you continue to amazzze me! That ice cream BREAKFAST is a gift from heaven!!! XO
i saw squash blossoms at the market yesterday and thought of you!!

i'm just trying to combine fruits and lettuce and i love it! so simple and delicate.
and the banana ice cream.. i make soft serve ones almost everyday ๐ but this looks like a gourmet dessert (and sure is)!
i uncook for myself, sometimes for family and friends
This morning I started up the dehydrator and have portabella sausage patties going as well as mock bacon and marinated mushrooms. So when I saw your carrot onion bread I said, what the heck I'll whip up a batch and throw it in with the rest. Your recipe took me a whole 5 minutes to prep. Thank you so much for all of your spectacular recipes. I use all of them!!
I cook predominately for myself since I eat all of my meals raw, but I have a husband and 5 children that I also prepare raw foods for. They eat a small portion of cooked but LOVE all of my raw dishes, that is what they have for their "sides" at each meal.
Peace and Health,
Elizabeth
Mmm…it all looks so delicious!
Raw fried ice cream? Seriously? I love it!
I've been preparing some raw stuff here and there and experimenting with the entire family! I've been feeding it to them and then waiting for their reaction and then telling them its healthy and all raw :)!! Thanks for the ideas! I just recently made the choco/avocado pie and it went over really well!!
Oh my goodness Lisa you amaze me once again: I want it all!
Love the menu design as well ๐
What beautiful meals you make. I became your follower because I need to eat like you. I am just getting into this raw thing and need all the help I can get.

Looks great! I just ordered your e-book haven't found the link in my e-mail yet. Can't wait to get to look at it.
"Unfried" ice cream, what a great idea! You are so creative :] And that tart – gorgeous!
i've never done raw foods before, but since a friend of mine is big into it i began subscribing to your blog. when this "ice cream" showed up the other day i was determined to give it ago. i'll admit, i used plain old chocolate chips for my cacao and sweetened coconut flakes since that's all i have, but after tasting the creation i decided no syrup was necessary -they are just plain great! maybe some day i'll make them the way they should be, but for now, thank you thank you thank you for sharing this recipe.
Yesterday was my sister's birthday. I made the chocolate raspberry tart for her, as she didn't want cake. Both she and my mother really loved it (and I liked it too!). Thanks for sharing the recipe.
Oh My Goodness! I made this dessert and it was a hit with everyone. I used to make avocado mousse but adding the banana is perfect! I would love to write about it on my blog http://www.therawkiwi.com and use one of your photos if that's ok? Thanks!
raw fried ice cream….genius
That peach salad is just beautiful. I may have to try that on Meat-n-Potatoes Man this weekend; he loves peaches.
Yahoo! "Fried" raw ice cream! Great idea! I just made some "fried" battered raw onion rings and zucchini and they were so yummy!
I make raw food for myself and love to share it. Now my guy friend is becoming vegan and it is fun to think of things to make for him! ๐
Great recipes I can't wait to try the salad. Peaches? I just wouldn't of thought of that. Thanks.
I combine only for myself except on a daily basis I try to feed my gang at least one raw food for dinner. It might be a salad, or fruit or a fancy dessert but something. Anything is better than nothing.
Cynthia
Another spectacular post! Fried ice cream for breakfast? The name alone had me sold. ๐
Love the combination of peaches and savory salad fixings.
Would you please pass me one of those sandwiches? ๐
Fried ice cream? That is SUCH a cool twist!
The bread looks amazing too.
