Raw Food Recipe: Lemon Cherry Cheesecake
crust
- 1 cup almonds ($2.00)
- 1 cup dates ($2.00)
- pinch salt
filling
- 2 cups almonds, soaked and (optionally) blanched ($4.00)
- 1/4 cup lemon juice ($.40)
- 1/2 cup agave ($1.60)
- 1 teaspoon vanilla
- pinch salt
- 1/2 cup water for blending
topping
- 1/2cup cherries ($.40)
- 1/2 cup dates ($1.00)
- 2 tablespoons lemon juice ($.40)
- 1/4 cup whole cherries ($.20)
In a food processor fitted with an “S: blade, process the almonds until coarsely ground. Add the dates and process until the mixture sticks together. Press into the bottom and up the sides of an eight inch springform pan.
For the filling, in a food processor fitted with an “S: blade, process the soaked almonds until finely ground. Add the lemon juice, agave, vanilla, and salt and process, using additional water as necessary. Pour into the prepared crust and smooth. Cover and freeze until firm
In a bullet type blender, process the cherries, dates, and lemon juice until very smooth. Stir in the whole cherries and spread over the top of the frozen pie. Cover and freeze again until firm.
To serve, remove from freezer about twenty minutes beforehand and allow the pie to thaw slightly before cutting and serving.

This looks fab. Can I use macademia for the "cheese" instead of almonds? I am being lazy at the thought of skinning lots of almonds!
Macadamias would be excellent, Hippy! I think I'll try it that way next time!
How long do I soak the almonds for ?
Could I use 2 cups almond flour in place of the 2 cups soaked/processed almonds? And I'm allergic to dates (but always see them in recipes!) what can I use instead?
I think almond flour would work fine, but have not used it this way myself. If you're unable to use dates, an equivalent amount of raisins will work really well.

All cheesecake recipes I have seen and tried so far, require freezing. Do you know by any chance how to make "warmer" cheesecake. I`m not a big fan of frozen food in the middle of the winter. Love your blog!

Hi From our side of the world cherries are just coming into season so I want to try this. Do you use fresh dates or dried ones from a packet? If they are dried do you soak them first? The fresh ones are lovely but really expensive.
How do i blanche almonds?
Not cheese cake its just a dessert. There's. No cream cheese or cheese there is non dairy cheese out there
