Mango Carrot Smoothie: Easy Affordable Raw Food Recipe

This is like a big glass of frosty sunshine. The mango is super sweet and I love adding even more tasty beta carotene in the form of carrots. Freeze the mango chunks overnight for a cold morning treat.

makes 3 servings ~ $1.50 per serving

ingredients

  • 3 cups mango, frozen (about 1 lb) ($3.00)
  • 2 cups carrots, cut into one inch pieces ($.60)
  • 1 orange, peeled ($.90)
  • 1 cup water (or almond milk), or more for blending

directions

  • Place all ingredients into blender and process until very smooth.
  • (Optional) For popsicles (see below), pour into molds and freeze for several hours or overnight.

Popsicle option!

This smoothie (like most) makes excellent popsicles. Just pour into popsicle molds and freeze for several hours or overnight. Remove from molds and enjoy!

    Do you use a regular blender? Wondering if I should steam the carrots first – of course, then they are not raw…

      You could steam them but you really don't need to. I use a regular blender as well as a VitaMix. The regular blender will take a little longer and maybe not get it quite as smooth, but it's still great … 🙂

    I just made this using a regular blender and it was so so good. I just added chia seeds and ground flax seed. I love it because I've been eating healthier and I don't feel deprived! Lol
