Sweet Black Cherry Salad with Cherry Dressing: Raw Food Recipe
Serves 3 ~ $2.83 per serving
1 head romaine ($1.90)
1/2 cup sliced cherries (best if fresh) ($1.25)
1 sliced cucumber ($.50)
1/4 cup sliced onion ($.20)
dressing
1 cup sweet cherries (can be fresh or frozen and thawed) ($2.50)
3 tablespoon balsamic vinegar ($.15)
1/4 cup agave ($.40)
1/4 cup tahini (or olive oil) ($.40)
1 tablespoon lemon juice ($.10)
1 teaspoon salt
1/2 teaspoon black pepper
1 small clove garlic
1 tablespoon minced onion
1/4 cup dried cherries ($.80)
This couldn’t be simpler or faster to make. Just chop the lettuce (which I got from a local CSA, more on that soon!), slice the cucumber and onion, add a handful of fresh, pitted cherries if you like. In a blender, puree everything but the dried cherries until very smooth. Stir in the dried cherries and add to the salad. Salt and pepper to taste.Crushed red pepper flakes are always good, too!
