  4. Hi J. Simmons. Sure. Any nut would go well, and if you'd like to save a bit on cost, sunflower seeds could probably be substituted for some or all of the nuts.

    I used a very scant 1/2 tsp of salt in the walnut meat and found it way too salty. Next time I will start with 1/8 tsp and add more if needed. The cashew cream is so easy and so delicious!

  12. Just a question, it seems like a lot of the recipes have what some people may consider a lot of fat. Does it matter how much fat is in each meal because the fat comes from nuts (and other whole foods)? When eating raw, would someone who wants to lose weight ever count calories? I'm so curious about this. 🙂

    • Charity, there is a lot of fat in this and some of my other recipes and in most "gourmet raw" recipes. This isn't really something I'd eat every day and most people wouldn't. But, "peel and eat three bananas" isn't a very interesting recipe. And yes, counting calories, imo, is important for weight loss .. it's what I struggle with whether raw or cooked lol.
