Tomato Basil Soup … a Raw Food Recipe

serves 2 ~ $1.83 per serving

  • 3 tomatoes ($3.00)
  • 2 carrots, chopped ($.20)
  • 2 celery stalks ($.20)
  • 1 medium onion ($.05)
  • 4 tablespoons olive oil ($.40)
  • 1 tablespoon dried basil
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • red pepper flakes

This is so simple and so satisfying and takes just a very few minutes to make.

Add all ingredients to blender and puree until smooth. Top with a few red pepper flakes and a drizzle of oil. Lately, I’ve been trying blended soups with the oil lessened or omitted and they’re just as delicious.

    I make all of your soups without the added oil and I have never been disappointed. I eat a very low fat, raw, vegan diet and wouldn't even think of adding oil to the soups. I only use 1 T of oil in my salad dressings and that is enough for multiple salads. I just use more fresh fruit juice or herbs in it and don't even miss the oil or vinegars.
    I am glad you have been trying them with less oil. You will be shocked at how much better you can feel just by reducing the amount of fats.

  3. I never add oil to your soups either! But I must admit that sometimes I heat them on the stove top. I know, I know, I shouldn't. Sometimes I cannot get myself to eat the soups raw, but they're always so delicious cooked!
