Treacle Tarts and Ice Cream ~ A Raw and Vegan Recipe for Kids!
serves 2 ~ $2.35 per serving
Treacle tarts and ice cream is a traditional English dessert, and also famously mentioned in the children’s classics, Chitty Chitty Bang Bang and Harry Potter. Treacle tarts are usually made with treacle syrup, a left over from the sugar refining process, bread crumbs, and lemon juice. We’ve made our raw and vegan version with some healthier (and easier) alternatives.
Treacle Tarts
- 1 cup nut/date crust mix (2 parts nuts to 1 part dates, ground in a food processor) ($2.50)
- 3/4 cup date paste (blend 1/2 cup dates and 1/4 cup water until smooth) ($1.00)
- 2 tablespoons almond butter ($.80)
- pinch salt
Press the crust mixture into the bottom and sides of two small tart pans.
Stir together the remaining ingredients until very smooth and spoon into the tart crusts. Put in the freezer to firm.
Ice Cream
- 2 cups bananas, chopped and frozen (about 2 large bananas) ($.40)
- 1 teaspoon vanilla
This is just easy and classic banana ice cream. Allow the frozen bananas to thaw just slightly, and add them and the vanilla to a food processor fitted with an “S” blade. It will take a few minutes, but this will process into a creamy ice cream.
Serve the tarts with a generous portion of ice cream.
